Cake Tins, Stands and Cooling Trays

All baking kitchens need a variety of cake tins, cake stands and cooling trays.  There are various sizes available from the Alliance website depending on what you are baking but keep a selection available. 

Cake Tins

Different recipes need different diameter cake tins because cooking time is calculated exactly according to the consistency and size of the cake mix. Basic cake tines are made from aluminium or non-stick.  Additionally, loose based cake tins are excellent for cake-baking because they allow for easy removal of baked cakes due to the two part mechanism.  To free a cake, you simply push gently on the base and remove it from the sides.  Finally, spring form cake tins come in a two part design.  The side is locked into place so it is easy to close and open making it a breeze when removing cakes from the tin.  Aluminium is a wise choice because it conducts heat well, it is lightweight and with a non-stick coating, it prevents damage to cakes during baking. 

Cooling Trays

Cakes must be cooled on cooling trays (sometimes referred to as cooling racks) to avoid soggy edges and bottoms.  Before cakes are stored they must be properly cooled.  Sponge cakes should be left in their tins for a few minutes before being removed and placed onto a cooling tray and rich fruit cakes should be cooled in their tins. Restaurant and hotel kitchens should keep a variety of sizes available for multiple cakes as well as small sizes for single items.

Cake Stands

Show off your chef’s cake creations on the dessert trolley or buffet with stunning looking cake stands.  Keep a selection of different styles and sizes available to make a dramatic display or for special occasions.  You should keep the following readily available:

  • Wedding cake stands (round and square).
  • Footed cake stands.
  • Cake stands with domed transparent lids.
  • Round cake stands.
  • Stepped cake stands (with layers) for individual cakes.
